How often is
often enough?
NFPA 96 sets it by how hard the kitchen works, not by the calendar. A wok line or a charbroiler running around the clock is a quarterly job. A church hall is an annual one. We tell you which one you are, in writing, and we hold you to it — that record is what protects you when somebody asks.
